Directions
1. To make the creamy broccoli cauliflower skillet: Heat a large non-stick or cast-iron skillet over medium fire and melt coconut oil. Gently stir-fry the onion until fragrant and translucent – about 2 minutes.
2. Add the chopped sundried tomatoes to the onion and continue stir-frying for two minutes.
3. Add broccoli florets, riced cauliflower, paprika, Italian seasoning, and cumin to the skillet with onion and sun-dried tomatoes and cook, stirring regularly for 10 minutes, until the veggies are crisp-tender.
4. Pour the vegetable broth and coconut milk over the cauliflower and broccoli and give a good stir to mix well. Lower the heat and continue cooking for 5 minutes, until veggies are done, and the cooking juices have reduced slightly.
5. Adjust seasoning with salt and pepper and serve the creamy broccoli and cauliflower rice stir-fry immediately. Enjoy!

How to buy broccoli?
When you go grocery shopping, choosing broccoli is not difficult at all: Broccoli florets should be deep green with a tight cluster of buds and no yellowing areas. The broccoli stalks should be bright green and firm, with crisp leaves. The freshest broccoli will still have a moist cut end.
Can I use a bag of frozen cauliflower rice or broccoli for this recipe?
Sure, you can use a package of frozen cauliflower rice or frozen broccoli for this recipe. Note that you would need to thaw and drain them before use to avoid sogginess. You can also make your own cauliflower rice with a coarse box grater, or buy riced cauliflower fresh from the produce section.
How and how long to keep the creamy broccoli cauliflower?
This creamy broccoli cauliflower stir-fry keeps well in an airtight container for up to 2 days in the refrigerator. You can reheat on the stove or in the microwave. Add a few drops of water when reheating to loosen the sauce.

I would rate this dish 4/5 stars. The yield is not accurate, so scale higher than what is recommended if you try this recipe. It's super easy to cook, and my whole family loved it.
