Sauté Tomatoes Zucchini

If you miss the flavors of summer, today’s recipe is for you! It is a simple combination of zucchini and cherry tomatoes flavored with rosemary and sage. It is a total delight with a grilled fish or white meat.

Ingredients list for Sauté Tomatoes Zucchini Recipe

Serves 4:

  • 2 zucchinis
  • 10 cherry tomatoes
  • 10 sage leaves
  • 3 sprigs rosemary
  • 2 cloves of garlic
  • Olive oil
  • Salt and pepper

Cooking instructions

1. Wash the zucchini and cut into medium-sized pieces. Peel and chop the garlic, wash the tomatoes, and cut them into quarters. Finely chop the sage leaves and rosemary.

2. In a frying pan, put 3 tablespoons of olive oil then add the garlic and herbs. Sauté for a few minutes to flavor the oil.

3. Add the tomatoes and zucchini, salt and pepper.

4. Cook over a medium heat for about 20 minutes, covered with a lid. Watch out during cooking and add a little water if the vegetables tend to cling to the bottom of the pan.

It’s ready! Enjoy with chicken breasts or fish; it’s a treat!
