Directions

1. To make the roasted pork tenderloins: Combine softened butter with flour, garlic powder, salt, pepper, and Cayenne – until you get a smooth consistency.

2. Preheat your oven to 375ºF (190ºC). Arrange vegetables and herbs in a rimmed baking dish, and drizzle with 1/4 cup vegetable stock and olive oil. Season with salt, and pepper.

3. Arrange the pork tenderloins on top then coat them generously with the compound butter.

4. Bake the pork tenderloins and vegetables for 15 minutes, then remove from the oven. Tent a piece of foil over the pork tenderloins so the top doesn’t burn, but the inside continues to cook. Put back in the oven and continue to bake for 15 more minutes, or until the internal temperature of the meat reaches 145˚F (62ºC). Use an instant-read thermometer to check for doneness.

5. Remove the pork tenderloins and vegetables from the oven, and let them rest for 10 minutes, still covered. Slice the tenderloins against the grain and serve with the veggies. Enjoy! ❤️
