Mini Cherries Cakes  and pistachios

The mini cakes of the weekend will not be on the roads but in your plates. To enjoy with a good coffee after a picnic or BBQ. These mini cakes with cherries and pistachios are made from a financier dough to keep the outside slightly crispy and tender in the inside. A very easy mini cake recipe to do at home which is very similar to these blueberry financiers with matcha tea.

Preparation time: 10 min
Cooking time: 20 minimum at 460°F ( 240°C)
Cost: Low

Ingredients: Mini Cakes with cherries and pistachios

For 4 people

  • A handfull of Cherries
  • 1 1/2 cup (200g) sugar
  • 1 cup (90g) almond powder
  • 1/2 ounce (15g) chopped pistachios
  • 3/4 cup (70g) flour (type 45 or 55)
  • 5 agg whites
  • 3/4 cup (180g) butter

Cooking instructions: Mini Cakes

In a bowl sift the icing sugar, ground almonds and flour, then add the chopped pistachios.
Mix with the egg whites with a spatula until the mixture is smooth.
Melt the butter in a saucepan until it gets a hazel color. Let cool 5 minutes before adding in the dough (mix well with a spatula).
Coat inside molds with softened butter and a brush.

These were so good, I was so surprised. Absolutely perfect when you just want a little cake for yourself. I am swapped Cherries for a strawberry thanks .
