Enjoy this delicious pear sorbet combined with pieces of fruit. Great moment of fun to make!

Preparation time: 15 min
Cooking time: 2 min
Resting time: 2 to 3 hours

Ingredients for the Williams Pear Sorbet

4 ripe Williams pears
Juice of 1 / 2 lemon
50 ounces of water
1 / 2 vanilla beans
250 g caster sugar
2 c. tablespoons pear liqueur
Assortment of candied fruit (angelica, pear, etc.).
Williams pear brandy (optionnal)

Preparation Steps for the Williams Pear Sorbet

Put water and sugar in a saucepan with half the splitted vanilla bean. Then prepare a low heat. Simmer 2 minutes after boiling.  Cut heat and cover, then leave to infuse with the vanilla until completely cooled.

Meanwhile, peel the pears, remove the heart and the seeds and cut them into quarters to go to the blender with lemon juice. Mix the purre with cooled syrup obtained earlier (after removing the vanilla). Scent with a little bit of pear liqueur.

Ten minutes before serving, remove the sorbet from the freezer to soften it a bit. Decorate with thinnly sliced candied fruit (angelica, pear, etc..).

Your recipe is awesome, thank you! I'm having guests over this week-end and I'm definitely serving your pear sorbet. I'm using these candied fruit in your recipe: http://www.histoiresucree.com/product_categories/candied_fruits_baking.html They are great for baking, the candied angelica is especially divine!
