Directions

1. To make the salsa verde chicken casserole: Add olive oil, garlic powder, Italian seasoning, salt, pepper, and red pepper flakes into a Ziplock bag. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the marinade covers the chicken. Alternatively, you can simply season chicken on a shallow plate, making sure to coat well. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).

2. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken and season with salt, pepper, and more spices. Pour the salsa verde on top of the chicken and cream cheese. Finally, sprinkle shredded mozzarella over the top to cover the chicken casserole.

3. Bake the chicken casserole for 20-30 minutes. Chicken is done when cooked through to an internal temperature of 165˚F (75°C). Serve the salsa verde chicken casserole warm with a side of cauliflower rice or baked veggies. Enjoy!

    How about cutting the chicken into bite-sized pieces? It would probably cook quicker and be easier to serve different sized portions depending on each person’s preferences.

    We like this recipe. For us it always takes longer in the oven though. I do about 45-50 min at 400 degrees. My boys are picky so I do plain chicken with same spices minus the cream cheese, cheese, and salsa for them. Take there chicken out about 30 min after and then brown chicken in a pan for flavoring. It finishes up about the same time as our chicken at 50 min.

    This recipe is just amazing! I make it once a week for idk how long now. I slice the breasts for thinner pieces. I use mixed cheese instead of mozzarella. The rest is the same! Omg sooo good. Bake at 400 for 33mins. Perfect every time.

    I decided to use regular salsa instead of salsa verde, with some Montreal chicken spice instead of Italian seasoning. Here is hoping! And yes I agree, whole breasts will probably take longer than 20-30 minutes to reach the right temperature.

    We LOVE this recipe! So easy and delicious. It does take longer than 30 min for the thickest part of the breast to reach 165*- more like 45-50 min.

    Recipe sounds delectable but I suggest you slice the breast horizontally which is what I'm going to do .I will get more servings .I think 20-30 minutes in the oven is not enough for a regular thick chicken breast .
