Pasta Salad with Avocado, Radish & Fresh Cilantro

Ingredients list for the pasta salad

  • Penne pasta
  • Ripe avocados
  • Radishes
  • Red onion
  • Green sweet pepper
  • Lime
  • Fresh coriander

For the sauce:

  • White wine vinegar
  • Olive oil
  • Freshly ground pepper

How to make the pasta salad

  • Cook pasta in salted boiling water until al dente; drain, rinse cold, and set aside.
  • Slice radishes and lime; finely chop onion and sweet pepper; combine in a bowl. Dice avocado, toss with lime juice, and add to bowl. Chop cilantro and add to vegetables.
  • Mix pasta with veggies and herbs.
  • Whisk olive oil and vinegar for the dressing, season, and pour over salad.
