This pasta salad recipe is quick, healthy, and easy to clean up. Yes, it still takes about 15 minutes of effort, but the reward is a fresh, flavorful lunch that feels totally worth it!

- Penne pasta
- Ripe avocados
- Radishes
- Red onion

How to make the pasta salad
- Cook pasta in salted boiling water until al dente; drain, rinse cold, and set aside.
- Slice radishes and lime; finely chop onion and sweet pepper; combine in a bowl. Dice avocado, toss with lime juice, and add to bowl. Chop cilantro and add to vegetables.
- Mix pasta with veggies and herbs.
- Whisk olive oil and vinegar for the dressing, season, and pour over salad.

Pasta Salad with Avocado, Radish & Fresh Cilantro

This is your new go-to pasta salad: Healthy, easy, and ready before you know it!
Ingredients
- 1/2 lb (200g) penne
- 2 ripe avocado
- 20 radishes
- 1 red onion, not too big
- 1 green sweet pepper
- 1 lime
- A few sprigs of fresh coriander
For the sauce
- 2 tablespoons white wine vinegar
- 6 tablespoons olive oil
- 1/2 teaspoon salt and freshly ground pepper
Instructions
- Set a large pot of salted water to boil (for pasta). Add pasta and cook until al dente, according to package instructions.
- Meanwhile, wash the radishes, remove stems and cut into thin slices. Put them in a bowl.
- Cut lime in half. Keep one half aside for later. Make thin slices with the second half, remove the skin. Then cut each slice into 4 and put in the bowl with radishes.
- Peel the red onion and chop it very finely. Wash the sweet pepper, remove the seeds, and chop very finely. Put everything into the bowl.
- Dice avocado after removing the kernel. Sprinkle the juice of the second lime half to prevent avocado from turning brown, and add to the other ingredients.
- Rince and finely chop cilantro. Add to the other ingredients.
- Once pasta is cooked, drain, and rinse with cold water to cool down and prevent from becoming sticky. Drain well with a colander, then add pasta to the bowl with the other ingredients.
- Prepare the sauce: mix olive oil with vinegar. Season, and pour into the bowl over the pasta salad.
- Mix, and serve the pasta salad! Enjoy!
