Ingredients list for the Grilled Stuffed Sea Bass with Garlic Mushrooms
- 2 medium whole sea bass (or stripped bass), scaled and gutted
- 2 tablespoons olive oil
- 3 or 4 baby bella mushrooms, sliced
- 2 large clove garlic, peeled and minced
- 1 inch fresh ginger, grated
- 1 tablespoon freshly-cracked black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 tablespoon Instant Bouillon
- 1 teaspoon dried basil
- 1 tablespoon Cayenne
- 1/2 lemon
- 1 teaspoon red chili pepper flakes

Directions
1. To make the grilled sea bass: Heat your oven to 450°F (230ºC). Lightly oil a rimmed baking sheet or line with aluminum foil. In a bowl, combine onion powder, garlic powder, basil, pepper, Instant bouillon, Cayenne, black pepper, and ginger. Divide the spice mixture in two parts.
2. Give your fish one final good rinse once you’re ready to cook, then lightly pat it dry using paper towels. Use a very sharp knife to score the sides of the fish in diagonal lines about 1-inch apart.
3. Brush the fish generously on both sides with the oil. Then briefly brush the inner cavity with oil as well. Combine mushroom slices with olive oil and half the spices, as well as the minced garlic, and stuff into the cavity of the fish.
4. Season the outside of the fish generously with the other half of the spices.
5. Transfer fish into the baking dish and roast for 18-20 minutes, or until the sea bass reaches an internal temperature of 145°F (63ºC) and flakes easily with a fork. Note that the cooking time will vary depending on the size of your fish.
6. Remove the grilled sea bass from the oven, and squeeze the juice from the lemon half over the top of the fish and sprinkle fresh chopped parsley (or basil, or cilantro) and red chili pepper flakes. Enjoy!

What is sea bass?
There are two kinds of fish you will see called sea bass at your grocery store:
- The first one is the Atlantic sea bass, which is harvested in the Atlantic Ocean. You might also encounter it by its Italian name branzino, which is a similar fish also called Mediterranean Sea Bass. These fish are often sold as whole fish of up to 2 pounds. You want to buy fish that have a deep black color and pink gills. Sea bass can be enjoyed in the same ways you would cook snapper or cod.
- Chilean sea bass is totally different and is not a bass — it is an Antarctic toothfish or Patagonian toothfish, which in fact is a type of cod. It has a very mild flavor and a delicate buttery texture. This fish is now pretty expensive, and is more and more popular in restaurants.
How to cook sea bass
One alternative to completely scale the fish is to leaves the scales on the gutted fish to help protect the flesh from drying out while it grills. However, be sure to peel off and discard the skin before eating the grilled seas bass. If you’d like to grill the sea bass on the bbq, prepare your grill for medium-high heat and don’t forget to oil the grate. Flip the fish at mid-cooking time.
