Directions

1. To make the Garlic Mushroom Chicken Thighs Recipe: Pat the chicken thighs dry with paper towels and trim off excess fat with a sharp knife. Combine the onion powder, garlic powder, Italian seasoning, salt, and pepper. Coat the chicken evenly with the mix of seasoning.

2. Heat 1 tablespoon of oil a large skillet over medium-high heat and sear chicken thighs until browned on each side and no longer pink in the center – approximately 8 minutes for each side, depending on the thickness of your chicken thighs. You may have to proceed in batches to not overcrowd the skillet. Transfer cooked chicken to a plate set aside.

3. To the same pan or skillet, melt the butter and add the mushrooms. Season with salt and pepper and cook until soft (about 3 minutes), stirring occasionally. Add the garlic and sundried tomatoes and saute for 2-3 minutes. Finally, add parsley and Italian seasoning; sauté until fragrant for one minute more. Deglaze the skillet with chicken stock, and allow the sauce to reduce a little if you like.

4. Return the chicken thighs to the pan and combine it with the mushroom sauce. Adjust seasoning with salt and pepper to your taste. Garnish with fresh parsley. Serve the garlic mushroom chicken thighs with sun-dried tomatoes immediately.

Tips for the mushroom chicken thighs recipe

This chicken and mushroom recipe with sun-dried tomatoes is super simple to put together: Sear the chicken thighs then remove them briefly while you put the sauce together, then pop chicken right back in the pan. This is a great-tasting, 30-minute dish, perfect for those busy weeknights!

  • Searing chicken helps to lock in the flavors and gives your chicken a perfect crispy texture – so don’t skip it when you cook chicken!
  • Use avocado oil or coconut oil instead of butter if you’re completely avoiding dairy products.
  • Make sure to brown the mushrooms when cooking to give them this rich, meaty flavor. we are all after. So don’t start stirring the mushrooms right away; let them sit in the pan for one minute so they develop a nice golden crust.

Can we use other chicken cuts for this recipe?

We use chicken thighs for this recipe because of dark meat pairs well with cooking juices from the mushrooms. While we use chicken thighs, you can substitute them with skinless, boneless chicken breasts or chicken tenders.

How to serve the garlic chicken with mushroom and sun-dried tomatoes?

We like it served with brown rice, pasta, zucchini noodles, quinoa, or with a side of roasted veggies and a salad.

How and how long to keep the chicken leftovers?

This garlic mushroom chicken keeps for up to 2 days in the refrigerator. Store in an airtight container and reheat in the microwave or covered in a pan with a splash of water to loosen the sauce.

Was really good and easy to make. Although I made it as the recipe directed, you could add artichoke hearts and capers to this for a deeper flavor. I was also thinking shrimp would work with this sauce as well. Sign of a good recipe is one that gets you creative!

This dish was fabulous, I added a little more chicken stock with a little corn starch to make a thicker sauce. Then added fresh spinach as well. My husband and I loved it!!

I thought this was really good. Unfortunately, I only had chicken breasts but I'm looking forward to making this again with thighs.

Great recipe but 1 star off because 2 days in the fridge is scaring people and incorrect. 4 days is USDA recommended time and let’s be honest, 5 or 6 is realistic. But 2 days is just causing unnecessary and unfounded fear of spoilage.

I put the dish in the oven covered for 30 minutes. The taste melded together & was well received!
