The sorbet combines creamy mascarpone and cottage cheese and is flavored with a simple lemon syrup. It’s fluffy, airy, and feels super light. Ingredients list for the cottage cheese sorbet

  • 3 cups water
  • 1 1/4 lb (400g) fine granulated sugar
  • 3 organic lemons
  • 1/2 lb (250g) mascarpone
  • 1/2 lb (250g) cottage cheese (we used creamy/no-curd cottage cheese)

Cottage cheese sorbet

Unlike traditional ice cream, this sorbet recipe is 100% egg-free and does not use milk. The creaminess comes from cottage cheese (hello proteins!) and mascarpone! To flavor this cottage cheese sorbet, we prepare a simple syrup infused with lemon zest and add lemon juice to the mixture. Feel free to try your own additions – see tips below for suggestions!

How to make the cottage cheese sorbet

1. In a saucepan, combine water, sugar, and grated zest of one lemon. Bring to a boil, then cut the heat and let cool down.

2. In a large mixing bowl, combine the mascarpone and cottage cheese until smooth.

3. Squeeze the lemons over the mascarponce and cottage cheese. Mix well with a whisk.

4. Pour the Lemon, mascarpone and cottage cheese mixture in the saucepan with the syrup. Whisk again, to get a smooth consistency.

5. Pour the mixture in a sorbet/ice-cream maker and churn according to the manufacturer’s instructions, typically 20 to 30 minutes. The sorbet should be firm and creamy. Remove to a clean, cold airtight container – freeze if you want a firmer consistency or you plan to serve later.

6. To serve the cottage cheese sorbet, scrape the sorbet using a tablespoon to form an oval-shaped scoop. Serve with a drizzle of honey, maple syrup, or fresh berries. Enjoy!

Tips for the cottage cheese sorbet

  • We recommend using whole milk cottage cheese for a creamier texture. Low-fat cottage cheese tends to be more watery.
  • Some nice additions include: vanilla extract, dried fruits, diced lemon peel, frozen blueberries, etc…

How to keep the cottage cheese sorbet

Store the sorbet in an airtight container in the freezer for up to a month. If the sorbet is too firm to scoop straight from the freezer, let it sit at room temperature for a few minutes to soften.
