Lemon sorbet cups – A real treat, perfect for summer! With the heat of Summer it’s easy to spend too much time eating ice cream and drinking soda to cool down. Rather than opting for not-so-healthy choices (and forking over serious cash), make these delicious lemon sorbet cups at home. With just 3 recognizable ingredients, you’ll save a few bucks and be confident that you control the exact amount of sugar you consume. You can make this sorbet without an ice cream maker, and keep the lemon shells for a stunning presentation. Yum!

Ingredients list for the lemon sorbet cups
Makes 2:
- 2 lemons
- 1/2 cup (125ml) water
- 1/2 cup (100g) granulated sugar or honey
- 1 tablespoon vodka

Directions
1. In a saucepan, heat water and sugar until dissolved. Meanwhile, cut a “hat” on top of the lemons, and cut a small bit of the bottom so they can stand up. With a knife and a spoon (or a grapefruit spoon) scrap carefully the inside of the lemon to collect the pulp and juice. Add pulp and juice to the saucepan. Put the lemons and hats in the freezer for later use.
2. Simmer over low heat for 3 minutes, then filter the syrup through a strainer and transfer to a bowl. Allow to cool down and refrigerate in the freezer for 15-20 minutes.
3. After 15-20 minutes, mix the lemon mixture with a fork and repeat this process every 20 minutes for 2 hours (or use your sorbet maker). Before assembling, mix the sorbet in a blender or food processor to break it down, add the tablespoon of vodka and pulse once more. Stuff the lemons and put back in the refrigerator with the hat on top until set, ready for serving.
