When you love eating pasta like me, you have to find something new to accommodate them every day, although I must admit that a simple piece of butter and freshly grated Parmesan is enough to treat myself! So here’s a pesto made with spinach which is a often unloved vegetable but I’ve learned to appreciate it because of this recipe precisely. A little lemon acidity gives this pesto a boost.
Ingredients list: Spinach Pesto Recipe
- 3/4 ounce (20g) fresh spinach
- 3/4 ounce (20g) of pine nuts
- 3/4 ounce (20g) salted ricotta
- A well-flavored olive oil
- Juice of a fresh lemon
- Pepper from the mill
Cooking instructions
Wash the spinach leaves and pat them dry with a paper towel.
Cut ricotta into small pieces.
Put spinach, ricotta, pine nuts in your blender bowl and mix until you obtain a thin puree.
Transfer the mixture to a bowl, add olive oil, lemon and pepper.
Mix thoroughly and taste.
It’s ready!
Next time try replacing the ricotta with fresh goat cheese, it’s even better!
