If you’re not familiar with the delicious sweetness of persimmon fruit, here’s a recipe you can trust for a great introduction. The persimmon sauce tastes light and refreshing; it complements many desserts like panacotta, cake, or ice cream, and can be frozen for future use. Serve chilled with an extra sprinkle of cinnamon.

Ingredient list for the persimmon sauce recipe
- 2 Fuyu persimmons
- A vanilla pod, or seeds
- 1/4 cup whole cane sugar
- 1 apple
- 1 glass of water
- 1/2 tsp ground cinnamon
Directions
1. Peel the persimmons and apple. Cut them into regular cubes for even cooking.
2. In a chef’s pan, make the diced apple stew gently with the two peeled persimmons, vanilla, and sugar, covered with a glass of water. Simmer slowly until the apple begins to melt.
3. Chill the sauce, and it’s ready! You can pulse the sauce for a smoother result, but this is truly optional.
Tips: Spread the persimmon sauce on puff pastry circles and bake for a few minutes in the oven.

Used Granny Smith apple- a little overpowered sauce. Will try 1/2 apple and 2 persimmon. Used 1/2c sugar and 2tsp baking vanilla. Would like more persimmon flavor but still very good. Canned the sauce after purée. Sauce not canned already disappeared!
