Ingredients list for the lemon cheesecake fat bombs

  • 1/4 cup coconut oil
  • 1/4 cup unsalted butter
  • 4 ounces cream cheese
  • 2 tablespoons of your favorite natural sweetener
  • 1-ounce fresh lemon juice + zest of one lemon (zest is optional)
  • Blueberries, or your favorite berries

Directions

1. Mix coconut oil, unsalted butter, cream cheese, and sweetener together with a hand mixer until very smooth. Add lemon zest and juice and combine. 

2. Spoon into silicone molds, mini-muffin liners, ice cube trays or onto wax paper, drop in a blueberry, and freeze until the fat bombs are firm. Pop out of molds and keep frozen in an airtight container until you need them. Enjoy!

Note: You can use any berries you like, or just skip them if you prefer the fat bombs plain simple.
