Melon Agua Fresca Recipe
Agua fresca is a refreshing Mexican drink made by blending fresh fruit, water, and sugar. Many variations exist depending on the regions, and some recipes include seeds, vegetables, or grains and cereals. This agua fresca recipe features fresh cantaloupe melon and is an absolute delight! Choose a ripe melon: it should be fragrant and slightly soft near the base of the stem. I used honey instead of sugar for this version, but feel free to use your preferred sweetener.

Directions
1. Seed the melon and discard the seed pulp. Cut the flesh into 2-inch chunks and discard the rind.
2. Place half the melon flesh in a large blender or food processor with 1 cup water, 1/2 tablespoon honey, and 1/2 tablespoon lime juice. Blend at medium-high speed until smooth.
3. Transfer into a large pitcher using a fine mesh strainer to filter out the pulp (this filtering step is optional if you want to keep the pulp).
4. Repeat with the second batch of remaining ingredients.
5. Add lime slices and ice cubes to the pitcher before serving, or chill for a couple of hours. Enjoy!
Note: The agua fresca will keep in the refrigerator for a couple of days.
