Ingredients list for the mango shrimp tacos
For the marinated shrimp
- 1 lb (450g) shrimp, shells removed
- 2 tablespoons paprika (or to taste)
- 2 clove garlic, minced
- 3 tablespoons olive oil
- 3 teaspoons lime juice
- Salt and pepper to taste
The mango salsa
- 1 mango, diced
- 1/2 red bell pepper, diced
- 1 tablespoon lime juice
- Salt and pepper to taste
For tacos
- Wheat or corn tortillas
- Cilantro for garnish

Directions
1. Cook shrimp into a large pot of boiling water until pink, shouldn’t take more than a couple minutes. Turn off heat and drain shrimp in a colander.
2. Mix all the ingredients of the marinade together in a large bowl, then add the cooked shrimp and mix well. Marinate for minimum of 30 minutes in the refrigerator to allow the flavors to blend.
3. To assemble tacos, start with shrimp and marinade, then mango salsa with red bell pepper. Garnish with cilantro and serve.
