How to make the chicken soup
- Slow cook – Add chicken, cream cheese, ranch seasoning, paprika, pepper, cheddar, and garlic powder to the slow cooker. Cook on low or high until the chicken is tender and easily shredded.
- Shred & mix – Remove chicken, shred with two forks, then return it to the slow cooker to absorb the creamy sauce. Add the bacon.

All the flavors of jalapeño poppers turned into a cozy, creamy chicken soup you can set and forget in your Crockpot!
Ingredients
- 2 lbs (900g) boneless, skinless, chicken breast
- 1/2 teaspoon garlic powder
- 8 oz (225g) cream cheese, softened
- 1 cup (250ml) heavy cream or milk
- 8 cups (2l) low-sodium chicken stock (or water)
- 1/2 pound (125g) jalapeño peppers, diced or sliced (about 5-6 peppers)
- 4 oz (125g) sharp cheddar cheese, grated
- 1/2 teaspoon paprika
- 1/2 cup crumbled crispy bacon
- 1 packet of ranch seasoning
- 1 teaspoon black pepper
Instructions
- Add the chicken, jalapeños, cream cheese, cream, chicken stock, ranch seasoning, pepper, paprika, cheddar cheese and garlic powder to a slow cooker and cook on low for 7-8 hours or on high for 3-4 hours.
- Remove the chicken chicken from the slow cooker, and shred the meat using two forks.
- Return shredded chicken to the slow cooker and give a good swirl to reheat and soak up the liquids. Add the bacon.
- Divide the chicken soup into bowls and top with more shredded cheese if you like. Enjoy!
Recipe Notes
- If you feel the soup is getting too thick, add more liquid during cooking time.
