Today I propose a gorgeous fig pie with an almond cream. The recipe is basic but all the richness comes from the ingredients themselves.

The dough

  • 2 1/2 ounces (75 g) butter
  • 1/3 cup (50 g) of sugar
  • 3 tbsp (15 g)  ground almonds
  • 1  1 large egg
  • 1 1/3 cups (125 g) all-purpose flour

First mix flour, sugar and ground almonds. Then add the softened butter and egg. Work to incorporate all ingredients and form one balls of dough. Book it in the refrigerator for 1 hour or 2. After this time, remove the dough from the refrigerator, spread it with a roller on a floured work surface, and garnish your pan: round or square to choose from, a large mold or individual molds… Prick dough with fork. Put in the fridge. This dough requires no precooking.

The almond cream:

  • 1 cup (100 g)  ground almonds
  • 3/4 cup 100 g sugar
  • 2  large egg
  • 3/4 cup (20 cl) of liquid cream
Mix all ingredients in a large bowl with a fork.

Figs:

You’ll need a dozen figs. Wash them, remove the stem. Cut into 4 or 8 according to preferred size.

Finishing the cake:

Remove the dough from refrigerator, spread the almond cream and spread the figs (cut side on top). Bake half an hour in an oven preheated to 360° F (180°c). Enjoy!
