Directions

1. To make the cucumber avocado salsa: In a salad bowl, combine diced cucumber, avocado, strawberries, onion, green pepper, cilantro, and Jalapeño.

2. In a small jar, combine 1 tablespoon olive oil, 2 tablespoons lime juice, salt and pepper and shake vigorously.

3. Add the dressing to the cucumber avocado salsa ingredients in the salad bowl. Toss together and adjust seasoning with salt and pepper if needed. Allow the cucumber avocado salsa sitting in the refrigerator for one hour to let the flavor meld.
