- 1 pound (450g) Italian sausage meat, hot or mild
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon fennels seeds
- 1 or 2 teaspoons Italian seasoning

- 1 teaspoon hot sauce (we used Sriracha)
- 1 cup heavy cream
- 5 cups low-sodium chicken broth
- 2 cups spinach
- 2 cups (10oz) refrigerated cheese tortellini
- 1/2 teaspoon salt and fresh cracked black pepper
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh chopped parsley, for garnish

How to make the sausage tortellini soup
The method to make this creamy soup with tortellini and sausage is pretty simple and straightforward:
First, brown the sausage with onion and garlic. Then add spices and seasoning before stirring in the chicken broth and cream.
Add spinach and tortellini pasta and cook on a simmer until pasta is al dente, about to 5 minutes more.

Directions
1. To make the sausage tortellini soup: In a pot or dutch oven, cook and break up the sausage meat and diced onions over medium-high heat until the onions are softened and the sausage is cooked through about 8 minutes. Add the minced garlic and fennel seeds to sausage and onion and cook for 1 minute.
2. Add Italian seasoning, cayenne, hot sauce, 1/2 teaspoon black pepper, and stir well to combine.
3. Add the chicken broth and use a wooden spatula to scrape the browned bits from the bottom of the pot. Add in the cream and bring to a boil, then reduce to a simmer.
4. Add the spinach and tortellini to the soup and simmer for 3-5 minutes. Taste the sausage soup and adjust salt if you like.
5. Divide the creamy sausage tortellini soup into serving bowls and sprinkle with red pepper flakes and fresh chopped parsley. Enjoy

You can make the creamy sausage tortellini soup ahead of time leaving out the tortellini pasta and spinach. Leave the soup on the stovetop on low stirring occasionally until you’re ready to serve, then add in the tortellini pasta and spinach to cook until tender – about 3 or 5 minutes.
How to make the tortellini sausage soup in the slow cooker
Simply cook and sauté the ground sausage, garlic, and onion. Add them all to the slow cooker with spices, seasoning, cream, and chicken broth, leaving out the spinach and cheese tortellini. When ready to serve, add in the tortellini and spinach until it is soft and tender.
