- 1 pound (450g) Italian sausage, mild or spicy, removed from casings
- 1 tablespoon extra-virgin olive oil
- 2 cups onion, diced
- 2 tablespoons fresh garlic, minced

- 5 fresh Roma tomatoes, diced
- 1 teaspoon kosher salt

- 2 quarts (1,8l) low-sodium vegetable broth
- 2 cups pasta
- 2 tablespoons fresh basil, chopped
- 2 cups fresh kale, chopped

How to make this Italian pasta sausage soup
We start with browning the Italian sausage in a large pot. Buy ground Italian sausage if you can find it at your local grocery store, or you can remove the sausage from the casing if you bought Italian sausage links.
Once the sausage has browned, it’s time to add chopped onion – you can drain the sausage from fat if you like. Then Add garlic, pepper flakes, tomato paste and give a quick stir, cooking until fragrant.
Then we deglaze everything with broth and fresh tomato. Scrape the bottom of the pot with a wooden spoon to get these delicious browned bits into the soup! Adjust seasoning, add basil and pasta and simmer until pasta is cooked.
Finally, we stir in the chopped kale 🥬 into the Italian sausage soup. We used Lacinato kale, but you can switch to dinosaur kale. Let kale wilt into the soup before serving.

Directions
1. To make the Italian pasta sausage soup: In a large pot or dutch oven, heat olive oil. Add the Italian sausage meat and break it up with a wooden spoon while it cooks.
2. Once the sausage meat has browned, add onion, and sauté for 4 minutes, stirring regularly.
3. Add garlic, pepper flakes, and tomato paste to the pot with sausage and onion, and cook for 2 minutes, stirring occasionally. Finally, add tomatoes, salt, pepper, pasta, and vegetable broth with fresh basil and stir to combine. Cover and simmer for 5 to 6 minutes, until veggies are tender and pasta is cooked al dente.
4. Stir in fresh chopped kale into the soup and adjust seasoning to your liking.
5. Serve the pasta sausage soup immediately with grated Parmesan cheese, red chili flakes, and more chopped basil. Enjoy! ❤️
