How to prep the sheet pan recipe ahead of time
Peel and cut all of the veggies and place in an airtight container, in the fridge, for up to 2 days. Make the sauce and store it in the fridge until ready to bake. Add the sausages to potatoes and other veggies on the sheet pan and roast following the recipe directions.

What to do with the baked sausage and potatoes leftovers?
You can keep the sheet pan sausage and potatoes leftovers for up to 2 days in your refrigerator using an airtight container. Gently reheat sausage and vegetables on a lightly greased baking sheet in the oven at 350ºF (180ºC) until hot. You can also reheat the leftovers in the microwave or on the stovetop in a skillet.

Baked sausage & potato sheet pan dinner is the easiest and most delicious way to have your weeknight meal cooked and ready to serve when you’re short on time!
Ingredients
- 1 package smoked sausages
- 1 1/2 lb (650g) small baby potatoes, quartered
- 1 onion, minced
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 4 tablespoons olive oil (or butter, or ghee)
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red chili pepper flakes, or to taste
- 1/2 teaspoon minced garlic
- 1/4 cup (60ml) low-sodium chicken stock (or beef, vegetable...)
- 1 teaspoon hot sauce of your choice (we used Sriracha)
- Salt and fresh cracked pepper
- Chopped parsley, for garnish
Instructions
- Preheat your oven to 400ºF (200ºC).
- Arrange sausages, bell peppers, onions, and potatoes in a large rimmed sheet pan or baking pan.
- Mix all the ingredients for the sauce in a small bowl: olive oil, Italian seasoning, red chili pepper flakes, garlic, chicken stock, and hot sauce. Pour over the sausage and potatoes. Season with salt and pepper.
- Roast uncovered for 30 to 40 minutes, or until fully cooked through. Sprinkle with parsley and serve the baked sausage and potato sheet pan dinner immediately, straight out of the sheet pan. Enjoy! ❤️
