Directions
1. To make the creamy garlic chicken thighs recipe: Heat the oil in a large skillet over medium-high heat. Season the chicken thighs on both sides with salt and pepper, and sear in the hot pan, for 5 minutes on each side, or until cooked through. Once chicken thighs are cooked, remove them from the pan and set them aside.
2. In the same pan, melt the butter in the remaining cooking juices leftover. Add in the sliced mushrooms and fry until golden-brown on one side, then stir to fry the other side.
3. Add garlic to the mushrooms and cook until fragrant (about one minute). Add onion and stir fry until translucent. Add the sun-dried tomatoes and fry for 1-2 minutes so they release their flavors. Finally, pour in the chicken broth, and allow the mushroom sauce to reduce down slightly.
4. Reduce heat to low, add the heavy cream, and bring to a gentle simmer while stirring occasionally. Season the creamy mushroom sauce with salt and pepper to your taste.
5. Add the parmesan cheese to the creamy mushroom sauce. Allow the sauce to simmer for a further minute until cheese melts through.
6. Add the cooked chicken thighs back into the pan; sprinkle with the parsley, and spoon the creamy mushroom sauce over each piece of chicken tighs. Serve the creamy garlic chicken thighs over steamed veg or cauliflower rice for Keto dieters, or rice or pasta for non-Keto. Enjoy! ❤️

Tips for the Chicken Thighs Recipe
This creamy chicken thighs recipe is so easy, quick to cook, ready in under 30 minutes or less! Crispy and tender boneless chicken thighs are smothered in a luscious garlic butter mushroom and sun-dried tomato cream sauce. The creamy garlic mushroom sauce is restaurant-quality and keeps the chicken thighs tender and moist on the inside.
- The key to obtaining a perfectly creamy mushroom sauce is to gently simmer the sauce to avoid separating and curdling.
- For more flavor, you can add a dash of white wine instead of using only vegetable broth.
- Avoid throwing all chicken thighs in the pan if you have a small skillet. You will end up with steamed, pale, and tasteless chicken meat. Each chicken thigh needs space between them which will sear properly and lock in moisture.

This recipe is DELICIOUS! The sundried tomatoes make for a great depth of flavor. I paired it with some baby potatoes. I used half and half instead of heavy cream and freshly grated about 1/3 cup extra Parmesan cheese for on top. It came out perfectly, I'll definitely make this again.

This is such an easy recipe to follow. The flavor was fantastic. My favorite part while eating this was the sun fried tomatoes. I totally recommend this recipe. I served it on top of Basmati rice. I am looking forward to lunch tomorrow at work.

Sooo Good! Didn’t have sun=dried tomatoes, sautéed some diced red peppers with the onions, used 2/3 C of half & half & 2/3 C chicken broth! Sauce was a little thick, added 1/3 C of the white wine I was drinking…roux was perfect!!!

This was great! I used a can of coconut cream. I would suggest chopping up the sun dried tomatoes.
