This creamy chicken, broccoli, and sweetcorn recipe strikes the perfect balance between comfort and freshness. Instead of heavy cream, cream cheese creates a rich, silky sauce with more body and tang, while keeping the dish lighter. A quick blanching step for the broccoli locks in its bright color and tender-crisp texture before everything comes together in the skillet, making this a fast, flavorful meal for your weekly rotation (speaking of which… have you tried our free meal-planning tool?)

Recipe highlights

  • Fast weeknight-ready recipe – Simple prep and quick cooking make this chicken dinner ideal for busy evenings.
  • Creamy without being heavy – The sauce is rich and comforting but balanced by crisp broccoli and sweet corn.
  • Family-friendly and versatile – Mildly spiced, customizable, and perfect over rice, pasta, or enjoyed on its own. If a picky eater is put off by broccoli, just remove the florets, and sweetcorn is always here at the rescue!

How to make it

  • Prep & blanch – Season diced chicken with spices, then blanch broccoli briefly and cool to pre-cook and keep that nice green color.
  • Cook the base – Sauté the onion in olive oil, add the chicken in a single layer to brown lightly, then stir in the sweetcorn and garlic. Deglaze with chicken stock.
  • Make it creamy & serve – Stir in cream cheese until melted and saucy, then add the broccoli. Simmer until everything is tender and coated, adjust seasoning.

Storage and leftovers

You can keep any leftovers in an airtight container for up to 3 days in your refrigerator. Reheat gently in the microwave and serve over fresh cooked rice or pasta.

Pro-tips

  • Instead of chicken breasts, you can opt for chicken tenders – it’s less work when cutting up ;) If you don’t have chicken breasts on hand, you can also use skinless, boneless chicken thighs.
  • You can either use fresh or frozen corn. Simply thaw under lukewarm water in a colander.
  • The blanching step for broccoli is optional, but it ensures tender vegetable bites that pair well with chicken and sweetcorn.
