How to make the creamy chicken bites

This recipe is very easy to make. Here are the three basic steps:

  • Prepare the chicken – Season diced chicken with salt, pepper, and spices. Dredge in a flour–Parmesan mix, then sear in oil and butter until golden and cooked through.
  • Make the sauce – In the same pan, sauté the onion and garlic, then deglaze with chicken broth and let it reduce. Stir in the heavy cream, simmer gently, and add the Parmesan until it is melted and smooth.
  • Combine & serve – Return the seared chicken bites to the pan, simmer in the sauce to thicken, and garnish with parsley and cracked pepper.

Directions

1. Season the diced chicken breasts with salt, garlic powder, Italian seasoning, and pepper.

2. In a shallow bowl, combine 4 tablespoons of flour, and 1/4 cup of grated parmesan cheese. Dredge the chicken cubes in the flour mixture and shake off the excess.

3. Heat 2 tablespoons of oil and 1 tablespoon of butter in a large skillet over medium-high heat. Swirl the pan to coat the bottom evenly.

4. Sear the chicken bites until golden on each side, until cooked through and no longer pink – about 4-5 minutes on each side, depending on the thickness. Transfer cooked chicken to a warm plate. Set aside.

5. Reduce the heat to medium. Sauté the onion in the remaining oil and chicken juices in the same pan, until softened.

6. Add the garlic and sauté with the onion until fragrant, about 2-3 minutes, then add the chicken broth to deglaze the pan. Scrape up any browned bits and let simmer and reduce to half, about 5 minutes.

7. Reduce heat to medium-low. Pour in the heavy cream. Bring the sauce to a gentle simmer for about 2-3 minutes, combining all of the flavors together.

8. Mix in the parmesan cheese and continue cooking for about 2-3 minutes until the cheese melts. Adjust seasoning to your taste with salt and pepper.

9. Add the cooked chicken bites back into the pan and let simmer for a further 2-3 minutes to thicken the sauce to your liking. The chicken will soak up all of the delicious flavors.

10. Garnish with parsley and a little black cracked pepper. Serve the creamy garlic chicken bites over mashed potatoes, zucchini noodles, rice, or mashed cauliflower. Enjoy! ❤️

Tips for the creamy garlic chicken bites

  • The key to getting these nice golden chicken nuggets is to sear them without disturbing them for a couple of minutes, then stir, then cook again for one minute without moving them around. This way, the Maillard reaction, which caramelizes the surface of the meat, has time to work its magic. Once the chicken pieces get that sear, the moisture will be locked in, and the chicken can continue cooking evenly. If you keep moving the chicken bites around from the start, you will end up with steamed chicken–especially if you have a crowded pan–and that’s not what you want!
