How to make the broccoli corn chicken stir-fry
- Prep & marinate – Season diced chicken with herbs and spices. Blanch broccoli briefly, then cool and drain.

Corn Broccoli Chicken stir-fry is an easy, healthy one-pan chicken recipe ready in 30 minutes or less that will quickly become a favorite for your busy weeknights!
Ingredients
- 1 lb (450g) diced chicken breast
- 1 tablespoon olive oil
- 1 medium onion
- 2 garlic cloves
- 8 oz (225g) broccoli floret
- 4 oz (110g) sweet corn kernels
- 2 teaspoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon red chili pepper flakes
- 1 tablespoon cornstarch + 1/4 cup water, to make a slurry
Instructions
- In a shallow plate, marinate the diced chicken with Italian seasoning, paprika, salt, and chili pepper flakes.
- In the meantime, plunge the broccoli florets in a pot of boiling water, then drain and soak in ice water to stop the cooking. This process is called blanching. Drain and set aside.
- In a skillet over medium-high heat, add 1 tablespoon olive oil. Add the diced onion and cook 1-2 minutes until translucent and tender.
- Add the diced chicken on one layer and cook undisturbed for 1 minute, then stir and cook on all sides, until golden brown but not fully cooked.
- Add the sweet corn and garlic to the skillet and give a good stir.
- Deglaze the pan with 1/4 cup of water. Add the cornstarch slurry and simmer for 1-2 minutes until the sauce starts to thicken.
- Add the blanched broccoli florets and continue cooking, stirring constantly for 2 minutes.
- Sprinkle with more red chili pepper flakes and serve immediately. Enjoy! ❤️
Recipe Notes
- Frozen vegetable work for this recipe. Simply thaw in the refrigerator overnight or thaw in a colander under running lukewarm water. Pat-dry or drain well before using in the stir-fry.
