- 12oz (340g) egg noodles, cooked
- 1 teaspoon kosher salt
- ½ cup (1 stick) unsalted butter, cut into pieces
- 8 large eggs
- 1/2 cup sugar

- 1 lb (450g) full-fat sour cream
- 1 teaspoons vanilla extract

Directions
1. How to make the noodle kugel recipe: Preheat your oven to 350°F (180ºC). Cook the egg noodles in a large pot of boiling salted water, stirring occasionally, until al dente. Loosely drain the cooked noodles from water. We use egg noodles in our kugel recipe but feel free to use other types and shapes of noodles or pasta. Cook the noodles just al dente.

2. Cut butter and melt for 30 seconds in the microwave. Keep it warm so it’s ready when you’ll pour it into the batter.

3. In the meantime, butter a 13×9-inch baking dish.

4. Break the eggs in a large bowl.

5. Add the sugar to the eggs, then whisk eggs and sugar until sugar is dissolved and eggs are frothy.

6. Add the cottage cheese, sour cream, vanilla extract, cinnamon, and salt to the egg mixture. Whisk vigorously to combine everything until the kugel mixture is smooth. For a smoother and homogenous kugel mixture, you can use a hand mixer if you like.

7. Pour in melted butter and continue mixing until fully incorporated into the kugel mixture.

8. Add the cooked noodles to the bowl with the kugel batter and toss to combine.

9. Transfer the kugel noodle mixture to your baking dish and bake the kugel in the oven, until the custard has souffléed and the top gets that nice golden brown color. Count about 50 minutes. If the top of the noodle kugel browns too quickly before the end of baking time, cover with foil.
