Directions

1. How to make the noodle kugel recipe: Preheat your oven to 350°F (180ºC). Cook the egg noodles in a large pot of boiling salted water, stirring occasionally, until al dente. Loosely drain the cooked noodles from water. We use egg noodles in our kugel recipe but feel free to use other types and shapes of noodles or pasta. Cook the noodles just al dente.

2. Cut butter and melt for 30 seconds in the microwave. Keep it warm so it’s ready when you’ll pour it into the batter.

6. Add the cottage cheese, sour cream, vanilla extract, cinnamon, and salt to the egg mixture. Whisk vigorously to combine everything until the kugel mixture is smooth. For a smoother and homogenous kugel mixture, you can use a hand mixer if you like.

9. Transfer the kugel noodle mixture to your baking dish and bake the kugel in the oven, until the custard has souffléed and the top gets that nice golden brown color. Count about 50 minutes. If the top of the noodle kugel browns too quickly before the end of baking time, cover with foil.

10. Remove the noodle kugel from the oven, insert the tip of a knife to check the doneness, and let cool at least 20 minutes before slicing and serving the sweet noodle kugel hot or cold. Enjoy!

Tips for the sweet noodle kugel recipe

This noodle kugel is deliciously creamy and slightly sweet. Serve it for breakfast or dessert – either warm or cold. Here are few tips to make it even better:

  • If you’d like to make a topping, you can sprinkle a mix of sugar and cinnamon over the top of the kugel right before baking. A classic streusel topping, crushed buttered graham crackers, or cornflakes work great as well!
  • You can sub ricotta cheese for cottage cheese to make the kugel dough.
  • Add a cup of golden raisins or other dried fruits into the kugel mixture for a sweeter note.
  • Make sure to boil the noodles in salted water. Even if this is a sweet recipe, this helps to add flavor to the kugel and also reduces stickiness.
  • Make use to use kosher salt in the kugel dough. If you use table salt, the kugel will end up too salty.
  • Do not over-bake the noodle kugel, otherwise, it will become dry and crumbly.

How to store and reheat the kugel leftovers?

Store the noodle kugel in your refrigerator for up to 2 days. If you made a topping, it won’t be as crunchy, but it will still taste delicious. You can reheat the kugel in your microwave or in the oven at 325ºF (160ºC) until heated through.
