1. To make the asparagus scrambled eggs: Crack the eggs into a medium bowl and add one teaspoon of oil. Whisk until smooth and combined.

2. Melt butter with olive oil in a skillet over medium-low heat. Saute the chopped asparagus for 2 to 3 minutes until crisp and tender.

5. Remove the skillet from the heat when the eggs are mostly set, but a little liquid egg remains. If you like your scrambled eggs fluffier, remove them a little earlier, and they finish cooking off-heat. If you prefer them stiffer, let them cook for 30 seconds more.
