- Trim the carrots to about the same length as the asparagus.
- Feel free to adapt the seasoning and toppings: Try with cumin powder (it goes very well with carrots), curry powder, onion powder, Italian seasoning, Cayenne, crushed almonds, pecans, Parmesan, etc…

Roast carrots and asparagus together on a sheet pan for an easy side dish that pairs with any main course. Plus, it's an effortless option if you're busy prepping a large Holiday dinner.
Ingredients
- 1 bunch of carrots, peeled
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- 1/2 teaspoon salt and pepper, or to taste
- 1 teaspoon garlic powder
- 1/2 juice of a large lemon
- 1 tablespoon chopped fresh parsley, for the garnish
Instructions
- Preheat your oven to 400ºF (200ºC).
- Evenly spread out the asparagus and carrots in a single layer on a rimmed sheet pan (you can line it with parchment paper for easier clean up). Sprinkle with salt and pepper, then drizzle with a bit of olive oil. Toss quickly with your hands.
- Roast the carrots and asparagus in the preheated oven for 20 minutes, then turn the broiler on and cook for another 2 minutes to get the vegetables a little crispy. Check the doneness of carrots with a fork.
- Serve roasted carrots and asparagus on a platter and squeeze some lemon juice on top and sprinkle with fresh parsley. Enjoy!
