Key ingredients for the roasted carrots and asparagus

  • Carrots: We like to use long, young carrots for this recipe. Baby carrots can work, but we prefer longer carrots for the presentation. You can use either regular orange or rainbow carrots for a nice pop of color!
  • Asparagus: Use medium-thick asparagus, not too thin. Trim out the woody white-ish part.
  • Seasonings: Salt, pepper, garlic powder, lemon juice, olive oil.

Pro Tips

  • Trim the carrots to about the same length as the asparagus.
  • Feel free to adapt the seasoning and toppings: Try with cumin powder (it goes very well with carrots), curry powder, onion powder, Italian seasoning, Cayenne, crushed almonds, pecans, Parmesan, etc…
  • The broil step is optional, but we find that it gives a nice crisp and slightly caramelizes the tips of the carrots. That’s a little extra for big flavor! Keep an eye on it so it doesn’t burn ;)
