This egg white omelet is a light and delicious brunch option with its savory filling. Smoked trout, chives, and red onion bring hearty yet refreshing flavors that contrast with the fluffy egg whites. Pair with a crisp arugula salad, and you get a fancy plate that competes with the best hotel restaurants for a Sunday brunch. This egg recipe is low-carb, gluten-free, and paleo – you’ll love the flavors. Enjoy!

Key Ingredients for the Egg White Omelet

  • Egg whites: We prefer using fresh eggs instead of boxed egg whites because cooked fresh egg whites are more fluffy. Separate the whites from the yolk manually and keep the yolk for other use.
  • Butter
  • Salt and pepper

Filling

  • Smoked trout: lean, savory, and delicious! You can usually find smoked trout at Whole Foods or in the seafood aisle of your favorite grocery store, right next to smoked salmon (which is a good substitution, but a little fattier).
  • Chives
  • Red onion

How to make the egg white omelet

  • Cook the omelet base – Whisk egg whites with salt and pepper. Melt the butter, then pour the eggs into the skillet and swirl to coat. Cook gently, allowing the uncooked eggs to flow to the edges.
  • Set & flip – Once mostly set, flip omelet carefully with a spatula and remove from heat.
  • Fill & serve – Add toppings (chives, smoked trout, red onion) on one half, fold over, and serve immediately.

Tips for the egg white omelet

  • Keep the heat low, as egg whites can overcook quickly. You want them fluffy, not rubbery!
  • Use a skillet that’s no larger than 8 inches. Otherwise, it will spread too thin and won’t get fluffy.
  • Smoked trout is already salty, so use light salt in the egg whites.

What to serve with the omelet

We like the omelet paired with a simple arugula salad, dressed with a wine vinegar, olive oil, and salt dressing. You can also try this easy Italian dressing. Throw in a couple of blueberries or blackberries for a slightly sweet touch – perfect for brunch!
