Ingredients
- 2 egg whites
- 1/4 teaspoon salt and pepper
- 1/2 tablespoon of unsalted butter
The Filling
- 1 tablespoon chopped chives
- 3 oz smoked trout, crumbled (or smoked salmon)
- 1 or 2 tablespoons sliced red onion (or shallot)
Instructions
- Whisk the egg whites vigorously until they are homogeneous. Whisk in salt and pepper.
- Melt butter in a medium skillet over medium-low heat.
- Add the whisked egg whites and swirl the pan until they mixture is evenly distributed.
- Cover and cook over medium-low heat until the egg whites begin to set. Use a spatula to gently push the edges in slightly and swirl the pan so that any uncooked eggs on the top pour over the sides to the edges of the pan and cook.
- Once the omelet is mostly set (count about 2-3 minutes), carefully flip it with a large spatula and turn off the heat.
