Ingredients
- 1 cup unsalted butter, softened
- 2 cups light brown sugar
- 2 teaspoons vanilla extract
- 3 tablespoons maple syrup
- 1/3 cup (80g) pumpkin puree
- 1 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 2 cups chocolate chips
Instructions
- Preheat your oven to 375ºF (190ºC). Line a baking sheet with parchment paper.
- In large bowl mix flour, baking soda, salt, baking powder, pumpkin pie spices, and cinnamon. Set aside.
- Cream together butter and sugar until combined. Beat in eggs and vanilla until fluffy. Fold in the pumpkin puree and maple syrup
- Mix the dry and wet ingredients until combined then add the chocolate chips and mix well.
- Form golf-sized balls and arrange them on your baking sheet.
- Bake the pumpkin chocolate chip cookies in your preheated oven for about 8-10 minutes. Take the cookies out when they are just starting to turn brown. Let your pumpkin chocolate chip cookies sit on the baking sheet for 2 minutes before removing them to a cooling rack and allowing them to cool down. Enjoy! ❤️
