Pumpkin Chocolate Chips Cookies – Softer than regular pumpkin cookies, our Chocolate Chips Pumpkin Cookies are even more delicious. They will help keep you keep full and satisfied after a good meal or a grab-and-go snack. If you don’t have pumpkin spice, just use 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg instead. Enjoy!

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon kosher salt
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 3/4 cup pumpkin purée
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups semi-sweet chocolate chips

Directions
1. To make the pumpkin chocolate chip cookies: Preheat your oven to 375ºF (190ºC). Line a baking sheet with parchment paper.
2. In a food processor (or high powered blender) blend all ingredients for the cookies (except chocolate chips) until the batter is completely smooth. Stir in the chocolate chips using a spatula.
3. Using an ice-cream scoop, arrange small balls of dough onto the prepared baking sheet. Bake the pumpkin chocolate chip cookies on 375ºF (190ºC) for 20 minutes until golden. Enjoy!
