- 2 chicken breasts, diced
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/3 cup heavy cream
- 2 cups low-sodium chicken broth
- 2 cups water
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 teaspoon crushed red chili pepper flakes, optional
- 1/2 teaspoon salt and fresh cracked black pepper
- 1/2 cup Sun-dried tomatoes, chopped
- 2 cups spinach, chopped
Instructions
- Heat up olive oil in a large Dutch oven over medium heat. Add the diced chicken and cook undisturbed for 1 minute, then stir regularly until almost cooked through.
