- 1 1/2 lb (700g) boneless skinless chicken thights, trimmed
- 1/2 tablespoon butter
- 1 8 oz package cream cheese, softened
- 1 4 oz can chopped green chilis
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup low-sodium chicken stock
- Fresh chopped parsley, optional
- Red chili pepper flakes, optional

Directions
1. To make the Instant Pot Keto Green Chile Chicken with Cream Cheese: Turn your Instant Pot to the “saute” mode and melt butter. Once the butter is melted add in the chicken thighs and saute for about 5-6 minutes on all sides minutes. Add chicken stock, green chilis, garlic powder, cumin powder, salt, pepper, and cream cheese.
2. Cover the Instant Pot and turn the valve to “sealing”. Set the manual/pressure cook button to 10 minutes. Once done, let the pressure release.
3. Carefully remove the lid. Shred chicken using two forks. Adjust seasoning with salt and pepper to taste. Sprinkle with fresh chopped parsley and red chili pepper flakes and serve the Instant Pot Keto Green Chile Chicken with Cream Cheese immediately on top of cauliflower rice, zucchini noodles, or Keto bread buns.
Note: Go easy on the salt as cream cheese is already salty.
