Just like almond financier cake, but made of hazelnut powder and matcha tea… Moreover, they are round and not rectangular!
I am proposing today a recipe for some mini hazelnut cakes, very similar to blueberry cakes. It’s so easy to do and needs egg whites. The remaining egg yolks will serve for a sauce or custard. I did my cakes with blueberries, but you can decorate yours with red fruits or anything you like.

- Matcha Green Tea Powder – 10 Oz

For about 15 pieces:
- A handful of blueberries
- 1/2 cup (100g) butter
- 3/4 cup (60g) flour
- 1/2 cup (100g) ground hazelnuts
- 1 cup (150g) icing sugar
- 1 teaspoon of matcha tea powder
- 4 egg whites
- 1 pinch of salt
Cooking instructions
Preheat your oven to 410 ° F (210 ° C).
In a bowl, combine flour, salt, sugar, ground hazelnuts, and matcha powder. Add the eggs whites one by one and melted butter and then blueberries (keep in mind you have to prepare 15 cupcakes) Pour into small buttered or silicone molds, place a blueberry just by pushing the dough and bake 12 for minutes.
Let cool before removing from molds…
