Directions

1. To make the Garlic Bacon Broccoli Skillet: Put broccoli florets into a food processor and pulse two or three times until you get coarse broccoli rice.

2. Heat the butter and oil in a large pan or skillet over medium-high heat. Sauté the onion until softened (about 3 minutes).

3. Add the riced broccoli and cook for about 2-3 minutes stirring from time to time.

3. Once broccoli is crisp-tender, add cheddar and bacon to the skillet. Cook until the mixture golden and slightly caramelized – about 8-10 minutes.

4. Pour in the vegetable stock and cook for 2 minutes, to reduce the sauce slightly. Add more stock to deglaze if necessary.

5. Add thyme, 1 tablespoon of parsley, and garlic. Cook the broccoli, bacon, and cheddar for half a minute, until fragrant. Season generously with salt and pepper, to taste, sprinkle with remaining parsley, and serve the Garlic Bacon Broccoli Skillet immediately. Enjoy!

Tips for the Garlic Bacon Broccoli Skillet recipe

  • How to choose the best broccoli: Look for firm, green, heads of broccoli with no yellow blemishes.
  • Try this recipe with cauliflower, Brussels sprouts, or shredded cabbage instead of broccoli.

Can we use frozen broccoli for this recipe?

Yes, but keep in mind that frozen vegetables render a lot of water. So make sure to thaw broccoli overnight and drain well before shredding in the food processor, otherwise, it might turn into a mush.

How and how long to keep the garlic bacon broccoli skillet leftovers?

You can keep the bacon broccoli leftover for 2 days in an airtight container in the refrigerator. Reheat gently in the microwave or on the stove, with a few drops of water to loosen the sauce.

Recipe was easy to follow and tasted great! We didn't have a food processor so we used our blender and put the broccoli on the low pulse setting for roughly 30 seconds. We also pre-cooked the bacon for a little bit in the air fryer then put it in the mixture because we weren't sure lol
