The French Christmas Yule Log RecipeA pure cocoa bûche! A chocolate sponge, chocolate mousse and chocolate ganache cake: it’s a cake for addicted and crazy chocolate fans. Especially prepared for christmas, it can be eaten all year long too!”

For 6 to 8 people:

Biscuit: for Yule Log Recipe

  • 9 eggs whole
  • 250 g caster sugar
  • 250 g flour
  • 50 g cocoa bitter
  • 25 g butter

Foam:

  • 300 g of black pastry chocolate
  • 8 white eggs
  • 200 g sugar

Ganache:for Yule Log Recipe

  • 20 cl crème fraîche
  • 50 g butter
  • 150 g of black pastry chocolate

Cocoa powder

Preparation of ingredients:

Preheat oven to 180 ° C, gas mark 6.
Take 8 eggs and separate whites from yolks.
Grease and flour a loaf pan or cake pan.
Break the chocolate ganache into small pieces.

Cookies:

In a bowl, place the 8 egg yolks, 1 whole egg and sugar.
Whisk until the mixture whitens. Stir in flour and cocoa mix.
8 Beat the whites until very stiff and fold them very gently to mix.
Pour batter into pan and bake for 15 m of cooking.
In the oven, unmold the cake on a wire rack and let cool.

Foam:

Melt chocolate in double boiler or in microwave.
Beat the egg whites until stiff and add sugar.
Pour melted chocolate over the white and mix with the usual precautions to avoid breaking the whites.
Reserve in refrigerator.

The ganache:

In a saucepan, bring cream to a boil, pour the chocolate broken into small pieces, mix and add butter.
Mix well to obtain a homogeneous preparation.
Reserve at room temperature.
Cut the cake into 3 in height.
Spread the cold foam of the first slice, cover with another slice of biscuit, cover the rest of the chocolate mouse.
Place a slice of cookie and top with ganache.
Sprinkle with cocoa powder and refrigerate until serving.
