Directions

1. To make the Tuscan salmon recipe: Heat the oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once salmon filets are cooked, remove from the pan and set aside.

2. In the same pan, melt the butter in the remaining cooking juices leftover. Add in the garlic and fry until fragrant (about one minute). Add onion and stir fry until translucent. Add the sun-dried tomatoes and fry for 1-2 minutes so they release their flavors. Finally, pour in the vegetable broth, and allow the sauce to reduce down slightly. 

3. Reduce heat to low, add the heavy cream, and bring to a gentle simmer while stirring occasionally. Season the cream sauce with salt and pepper to your taste.

4. Add in the baby spinach and allow to wilt in the sauce, and add in the parmesan cheese. Allow the cream sauce to simmer for a further minute until cheese melts through. 

5. Add the grilled salmon filets back into the pan; sprinkle with the parsley, and spoon the sauce over each filet. Serve the creamy Tuscan salmon over steamed veg or cauliflower rice for Keto dieters, or rice or pasta for non-Keto. Enjoy! ❤️

Tips for the Tuscan salmon recipe

This Tuscan salmon recipe is so easy, quick to cook, and ready in under 20 minutes or less! Crispy and flaky salmon is smothered in a creamy garlic butter spinach and sun-dried tomato sauce. The creamy garlic sauce is restaurant-quality and keeps the salmon fillets tender and moist on the inside.

  • The key to obtaining a perfectly creamy sauce is to gently simmer the sauce to avoid separating and curdling
  • For more flavor, you can add a dash of white wine instead of using only vegetable broth.
  • Feel free to substitute vegetable broth with chicken broth or water.
  • If you don’t have salmon available, substitute salmon for trout, cod, or even tilapia.

How to cook salmon?

  • Use either skin-on or skinless salmon fillets. We like skin-on fillets because it guarantees the second round of searing won’t stick to the bottom of the pan.
  • To allow the salmon flesh to crisp up evenly while cooking, bring the salmon fillets at room temperature and pat dry with paper towels. This also helps to prevent sticking in the pan.
  • Season salmon just before cooking to avoid drawing out the moisture and end up with dry salmon. 
  • Make sure your pan is nice and hot before adding your fillets in. Sear your salmon fillets flesh-side down first (skin-side up) until nicely golden and crispy for 3-4 minutes each side, depending on the thickness. If the fillets are extra-thick, cook a little longer, reducing the heat to medium or medium-low, so you don’t burn the outside while the inside is still undercooked.

What to serve with the Tuscan Salmon

This salmon recipe is super easy and goes with lots of possibilities when it comes to choosing a side dish. Some of the best options for this salmon recipe are:

  • Steamed/roasted veggies are a low carb favorite ( zucchini noodles, cauliflower rice, asparagus, broccoli, etc…)

How to Store the Cooked Salmon

The leftover salmon will last up to 3 days in the refrigerator. Store the leftover Tuscan salmon in an airtight container. You can also freeze the fish in an airtight container for up to 1 month.

    I made this and my family left none behind. I added a tbsp of sugar just because and it was awesome. My husband raved about it. My picky 3yr old didn't want to try but when she did, she was in love. I did the salmon. 3 minutes then 2 minutes on the other side. It was nice and buttery. I served this with roasted sweet potatoes mixed with russet potatoes, sauteed asparagus and steamed broccoli.

    Great recipe and sauce for multiple proteins, but in no way shape or form did this take 20 minutes. The salmon, veggies, waiting for the stock to heat up and reduce, pan to heat down, cold cream to slowly simmer, cheese to melt.. not just 20 minutes

    The first time I made this, I made as written. My husband and I both thought that the recipe was good, but that using salmon - was just too ‘fishy’. Salmon has so much flavor on its own, and then adding all the additional flavors- was a bit much. So I now make this recipe using red snapper. I also reduce the amount of cream and Parmesan to taste.

    I hate salmon. Hate the taste.. but trying to eat right. I made this tonight and Lord Jesus... this was absolutely excellent. My son (17) that thinks he is the greatest food critic known to man scarfed this up like a man facing death row awaiting his last favorite meal.     The best! It turned out great and It was so easy to cook. I didn’t add any broth, since I didn’t have any available, and didn’t add water either as a substitute.     I made this last night with mahi mahi vs salmon since my husband doesn’t like salmon! It is soooooo tasty!     Really nice. Salmon stuck a little and i used sundried tom paste as didnt have the real toms in oil but it was sooooo nice. The skin went all crispy which added texture to the sauce. Will definately make again loved it.

    Delicious ang quick. I almost followed the recipe to the 'T', which is very rare for me. Only changes I made was to skin and cube the salmon into large bite size pieces because the seafood deli guy cut the salmon awkwardly. I didn't have fresh garlic on hand so I used minced and pureed from the jar. I will make a again and again.

    Wouldnt bother to leave reviews HOWEVER. THIS WAS SO GOOD AND SO EASY TO MAKE. i didnt really follow the measurements accurately as I only did 1 filet of salmon, and didnt have vege broth( replaced it with chicken stock + water) and no sundried tomatoes ( cut halves of cherry tomato truss) instead. i also used thickened cream instead of heavy cream. fantastic recipe. easy. no regrets. pls try!!!! thank me later.

    Usually make this recipe with chicken, but I thought I'd try it with salmon. My picky 17 year old practically licked the plate. He kept saying how good it was.     OMG. Made this last fall but added sliced kalamata olives and a small amt of chardonnay and reduced the fat by using 1/2 and 1/2 instead of the cream. Served it with asparagus. Ridiculously good.     Could've been a little better. Flavor 10/10, but I totally prefer to bake the salmon than cooking in a pan as it traps all the moisture inside preventing the salmon from drying (15min on 450F). Cooked 2 fillets in the pan and 2 in the oven and the oven ones were superior. Also if you don't like the sun-dried tomatoes you could use cherry tomatoes- it's just as great. I skipped the parsley as parsley isn't really made for fish in my eyes.

    DELICIOUS!!! I used Roman cheese as shredded Parmesan was not available. Amazing! I seasoned the salmon with a few turns of my salt and pepper mill. Amazing! I used regular spinach that I cut into smaller pieces. Amazing! As the heavy cream (I used heavy whipping cream) was simmering, I seasoned it with a few turns from my salt and pepper mill. Amazing! This dish is my new “I have someone coming over for dinner what shall I cook?!” dish. I told my mother to cook this for her husband.     I tweaked my own version based on the reviews and I got a DEFINITE thumbs up.. I didn't add the white wine this time nor the parsley I added extra garlic a extra couple of tablespoons of broth I also added 1/4 of red and yellow bell peppers when I added the onion Before cooking the salmon I also sprinkled onsome lemon pepper seasoning and mrs dash tomato basil seasoning Last change was I added extra spinach and it didn't change sauce at all

    What a lovely recipe. I didn't have sun dried tomatoes, so I used a half of a pint of cherry tomatoes. I only used 1/2 an onion. I added a bag of prepared deli shrimp and lobster pasta to simmer with the salmon. There was more than enough sauce left to add pasta. So glad that I did, it was splendid. Thank you for this recipe.     I made this for a friend, and she said it’s the best salmon she’s ever had. She insisted on having the recipe. I loved it too. Easy to make and served it all from the same pan. My only suggested tweaks: 8 oz of sun-dried tomatoes (this is where all the flavor comes from), 1 cup Parmesan, and avocado oil instead of olive oil (higher heat tolerance = better crust on salmon).     So I have a board here titled “Tried Tested and True” and this made it into that board. My gawd it was fairly easy with fairly simple on hand ingredients. Was FABULOUS. Used some fairly inexpensive salmon from the store but was still amazing.     Made this recipe tonight for a family of 4, instead of pan frying the salmon, I oven baked it instead as I made 6 fillets. I followed this recipe for the sauce to the T, tasted at every added ingredient and honestly the final sauce is absolutely to die for. I cooked the garlic in extra virgin olive oil (without adding butter) but the same ingredients and amounts throughout. There was plenty of sauce and it was super filling aswell, I served with cauliflower rice for myself and chips for the family as I am following the keto diet.     Delicious!! I switched it up a little bit to make it even healthier by omitting the butter and only using olive oil and instead of a cream sauce I did a white wine reduction. I had some fresh mushrooms so I toss those in with the onions and garlic.     This was amazing. When I was adding the meal to track it, it seems like the nutrition numbers are way off. To get that much protein, it seems like you would need 13oz or so of salmon per serving, and that alone would give you about 47g of fat. That’s before everything else is added in. I’m coming up with 115g of fat total per serving if you use enough salmon to get 90g protein per serving. Sorry for all the numbers, but I’m new to keto, and trying to make sure if my macros. Can someone explain where I could be messing up?

    This dish was amazing! I don’t like to cook salmon because I feel like it’s always very fishy tasting however there was nothing like that at all. The sauce is amazing and we were licking our dishes clean!

    I made this for dinner last night. Wow! Not only was it absolutely delicious but the presentation was so elegant that I ended up dimming the lights and setting the table with candles with soft music playing in the background. It was as though we were having a gourmet dinner at a fine restaurant. My husband absolutely loved it! This recipe is a keeper for sure!

    This is absolutely delicious! And easy to make. I used chicken broth in place of veggie broth, and used half n half. I put in twice as much chicken broth, half of the half-n-half, and a lot of spinach, the sauce is just devine, goes very well with salmon over rice. 5 stars

    Made this tonight after an afternoon drive. Fast, easy, and most important full of flavor. Had no dried tomatoes so I used roasted peppers in oil - just dried them well before cutting them up and adding to the pan. Served over broad noodles. No leftovers from this dish. BEST SALMON RECIPE EVER.

    This recipe is FABULOUS! I am a very tenured cook, and this is- by far- the best salmon recipe I’ve ever made. My 17 year old daughter actually asked to learn how to “make this recipe so she knows how to make a recipe like this.” I can’t underscore how big a statement this is from my non-cooking child! The rest of the family said restaurant-quality (like the other reviews) so you know it’s true. Served with a melange of roasted veggies and a quinoa-lentil bed. Yum!!!!!! Plenty of sauce. Perfect! Thank you for this one!!! My only change was deglazing with a bit of dry vermouth before the stock and using prepared, jarred garlic.

    This is a very yummy recipe, café quality for sure... easy to modify to suit your taste and works beautifully with salmon and other fish, as well as with fresh chicken tenderloins.

    This is such an amazing recipe! I have made it several times, and it always turns out delicious. Sometimes I swap out the sun-dried tomatoes for roasted red peppers, but it's delicious either way. It's a restaurant-quality entree!

    I added half a cup of Fresh shredded Romano cheese in addition to the Parmesan cheese and it made the sauce so thick and creamy!! There was so much sauce I added a package of gluten free linguine and tossed everything together and it made such a difference! I’ll never look at Olive Garden the same way again, if you haven’t tried this recipe, you are truly missing out. You’ll never go back, I promise!

    Wow, made this last night. It was amazing. So simple to do and incredibly tasty. I'm on a very low carb (not keto) diet to reduce my blood sugar count so I served this with steamed broccoli and baby carrots.

    This was SO good!! And super simple! I left a little of the oil from the tomatoes, and really let the chicken broth cook down. I ended up with a sauce so thick I wasn’t sure it was going to work out! But then the spinach wilted and it was PERFECT! I will will DEFINITELY make this again!

    Well...I cheated on the sauce...I actually used "jarred garlic Alfredo, put minced garlic and sun-dried tomatoes and a "splash of white wine, tad of real butter...Simmered about 15 minutes before adding "FRESH baby spinach....Once ready I poured over the salon fillet, and used "extra to pour on top of rice(of choice) that I cooked with sliced green onions(whole green onion! Too die for! My veggie of choice was baby fresh asparagus(which also was yummy with the sauce or just REAL butter and minced garlic as a side.There are "so many good "jarred Alfredo sauces on the shelves that make fish or chicken breast fancy dinners easy! "Depending on "what you are making, just adding a "pinch or real butter, or a little "cream cheese /parmesian too) to these "jarred sauces will "Put them OVER the top in texture and flavor boost!

    Great recipe. To make it thicker, just add more cheese. I altered it a little and it turned out great. Can wait to try this sauce with a pasta.

    I made this for lunch, substituting 2T of Tomato paste for the sun-dried and served it over fresh tagliatelle pasta. It was delicious! I also used crème fraîche instead of liquid cream and a Knoor vegetable bouillon "blob" instead of the liquid stock which meant I didn't need to reduce the sauce and it was lovely, thick and creamy. I'll definitely make this again with the sun-dried tomatoes!

    I made this last night for my boyfriend and I and we loved it. It definitely didn't look as pretty but you know that happens. Anyway, I deliberately followed instructions but kept some of the sun-dried tomato oil in the jar to pour into the sauce just for more flavoring. In addition, I added Trader Joes' red wine vinegar at different points throughout. First when sauteeing the onions, then with the vegetable broth, then at the end as a final step before submerging the salmon. Also, this changed how I will cook my salmon. I've never done flesh down first and feel like it made a huge difference. I will cook again, but with some time in between as it isn't the best for my diet, ha. (p.s. heavy cream)

    I didn't have Salmon so I use some Long Cod that we had in the freezer. Added basil to the sauce and was amazing. My wife who loves seafood says that she would choose it for her last meal.

    I was looking for ideas to use some frozen salmon I bought. I added mushrooms and crushed red pepper. I add mushrooms to almost everything. I served it over cauliflower rice. Turned out so good! The flavors are amazing. This will now be my go to salmon recipe unless I am smoking it on the pit. I’ve got extra sauce so I may cook up the other two fillets for dinner tomorrow.
