Ingredients list for the Instant Pot Mashed Potatoes
- 3 lbs (1.5kg) red and Yukon Gold potatoes, peeled if desired, halved or quartered
- 4 garlic cloves, peeled
- 1 1/2 cups (375ml) low sodium chicken stock
- 3 tablespoons butter or ghee, plus more for serving
- 3/4 cup heavy cream
- Salt and freshly ground black pepper
- Minced fresh thyme, for garnish (optional)

Directions
1. Place the potatoes, garlic, salt, black pepper, chicken stock, and butter or ghee in your Instant Pot.
2. Close the lid and make sure the valve is set to “Sealing”. Press “Manual” and adjust the cooking time to 6 minutes. Cooking will begin automatically once high pressure is reached.
3. When the time is up, push “Keep Warm/Cancel”, carefully turn the valve to “Venting”, and wait for the steam to release.
4. Remove the lid and use a potato masher to roughly mash the potatoes right in the pot. Add heavy cream, and continue to mash until your obtain the desired consistency. Adjust seasoning needed and serve hot, topped with additional butter or ghee and fresh thyme.
Note: you can easily double the batch for larger parties!
