Directions

1. To make the creamed spinach: In a large pot of boiling salted water, cook spinach for 30 seconds. Drain spinach and place it in a bowl of ice water. When cool enough to handle, drain and squeeze out as much excess water as possible from the spinach.

2. Melt butter in a large skillet over medium heat. Add onion and cook until soft, 5 minutes stirring regularly. Add minced garlic and cook until fragrant, 1 minute more.

3. Add milk, heavy cream, and cream cheese to the skillet. Simmer until the cream cheese is melted. Season with salt, pepper, and a pinch of cayenne.

4. Add cooked spinach and Parmesan and stir to combine. Allow the sauce to thicken a little, so it coats the spinach. Remove the creamed spinach to a serving dish and serve immediately. Enjoy! ❤️

Tips for creamed spinach recipe

  • You can prep the spinach two ways: fresh spinach leaves that first get wilted in a pot of boiling water as we did in the recipe. Or you can wilt the spinach in a skillet with a dollop of butter, then remove it to a plate and follow the recipe from step 2. You can do either!
