Corn Dog Muffins — Super cute and adorable, these cheesy mini corn dog muffins make a great brunch snack or the perfect appetizer for the big Thanksgiving dinner coming up! Serve these moist and flakey treats with a side of ketchup or hot sauce!

Ingredients list for the Cheddar Corn Dog Mini Muffin
- 1 cups all purpose flour
- 1/2 cup sugar
- 1 cup yellow corn meal (medium or fine grind)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs lightly beaten
- 1/2 cup butter, melted and cooled slightly (or oil)
- 1/2 cup shredded cheddar cheese
- 4-5 wiener sausages, cut in 4

Directions
1. Preheat your oven to 350°F (180°C) and butter a mini muffin pan.
2. Combine flour, sugar, corn meal, baking powder and salt in a large bowl.
3. Combine milk, eggs, and melted butter in a separate medium bowl and whisk well.
4. Fold the wet mixture (milk, eggs, and butter) into the dry mixture (flour, cornmeal, sugar, salt and baking powder) and stir until just blended and smooth. Gently stir in the cheese.
5. Fill muffins the tins 3/4 up and stick a sausage piece in the center. Bake for 10-12 minutes, until lightly golden and a tooth pick inserted in the center comes out clean. Allow to cool down for a couple of minutes and remove from the muffin tin.
Note: You can also make these into regular sized muffins. Just bake for about 20 minutes.
