To change from rice and pasta, we’ll use chickpeas as an accompaniment to white meat, duck or a portion of fish! This spicy and caramelized version is ideal if you are looking for an easy idea for a sweet/salty association.
Ingredients: Spicy Caramelized Chickpeas
- 1/2 lb (265 g) of canned chickpeas
- 4 teaspoons (20 g) butter
- A pinch of grated nutmeg
- 1/2 teaspoon ground cinnamon
- 2 tablespoons honey
- 1 lemon
- Salt and pepper
Cooking Instruction
Rinse chickpeas several times and drain.
Melt the butter in a pan, add cinnamon and nutmeg… Cook the chickpeas for 5 minutes.
Add honey to caramelize, stirring gently over low heat.
Finally pour the lemon juice and 20 ounces of water and let reduce until getting a kind of syrup that will coat each chickpea.
To serve hot to enjoy the flavors and fragrances…
And if you want to try a smaller portions , the chickpeas will get their place as a buffet appetizer!
