Ingredients list for the chicken noodle soup

  • 2 cups shredded cooked chicken (use chicken leftovers or rotisserie chicken to save time)
  • 12 ounces (300g) noodles (or your favorite pasta)
  • 2 tablespoons olive oil
  • 1 cup carrots, peeled and sliced thin (about 1 1/2 large carrots)
  • 1/2 or 1 red bell pepper, diced
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 8 cups (2l) low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and fresh cracked black pepper, to taste
  • Fresh flat-leaf parsley leaves, finely chopped for garnish

Directions

1. In a large dutch oven, add oil and heat over medium-high heat. Add the carrots and saute for about 2 minutes, then add onion and continue saute for 2 minutes. Add bell pepper and garlic and continue saute for 3 minutes until vegetables begin to soften, stirring from time to time.

2. Add the chicken broth, Italian seasoning, black pepper, and bring to a boil. Allow the mixture to simmer gently for about 5 minutes, until vegetables are fork-tender.

3. Add the noodles and simmer the soup for about 10 minutes, or until noodles are soft and cooked through. Add in a cup of water if the soup becomes too thick. You will adjust seasoning afterward.

4. Add chicken, parsley, and a dash of lemon juice to brighten up the flavor. Boil for 1 to 2 minutes, until chicken is warmed through. Adjust seasoning and ladle into bowls. Garnish with fresh parsley and additional lemon juice if needed. Enjoy!
