- 1/2 lb (225g) chicken breast, chopped
- 2 tablespoons olive oil
- 4 Roma tomatoes, chopped
- 1/4 cup (125ml) chicken stock
- 8 oz (225g) fresh spinach
- 3 garlic cloves, minced
- 1/4 cup sun-dried tomatoes, chopped, drained of oil
- 1/2 cup parmesan, grated
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon fresh cracked pepper
- 8 oz (225g) rotini pasta (or farfalle, penne, spaghetti… or any pasta of your choice)

Directions
1. To make the Tomato Spinach Chicken Pasta: Cook pasta al dente, according to package directions.
