To choose good butternut squash for baking, look for a squash that is plump, unblemished, and that feels heavy in your hand. Store the butternut squash in a dry, cool, dark place (like a pantry or cupboard, avoid the fridge) for two weeks.

How to cut a butternut squash

For this roasted butternut recipe, we only use the top part of the squash – ie. the part that is not hollow. Here are the steps to cut the butternut:

  • Grip the butternut firmly with one hand and cut crosswise right above the plump, hollow part. Keep the hollow part for another recipe.
  • Peel the butternut squash with a vegetable peeler. The skin of the squash can be tough and might need several passes.
  • Then cut the squash in halves, vertically.
  • Laying the butternut halves flat, make thin half-moon slices.

How to bake butternut squash

The method for baking butternut squash is very simple and you get those nice caramelized edges. Here’s how we roast our butternut squash:

  1. Preheat the oven to 400°F (200ºC) and butter a baking dish.
  2. Peel and slice the butternut squash and marinate with garlic, garlic salt, pepper, paprika, oil, parmesan, and thyme.
  3. Arrange the butternut squash slices in a spiral into the baking pan.
  4. Roast the butternut squash for 30 to 35 minutes, or until cooked through. Easy!

Directions

1. To cook the roasted butternut squash: Preheat your oven to 400ºF (200ºC). Peel and cut the top part of the butternut squash into thin slices using a sharp knife – See instructions below.

2. Place butternut slices in a large salad bowl, then add garlic, oil, butter, garlic salt, paprika, pepper, Parmesan cheese, and fresh thyme. Mix well until the butternut slices are coated with the mixture.

3. Lightly butter a baking dish and arrange coated butternut squash slices into a spiral. Sprinkle with a little more parmesan if you like.

4. Bake the butternut squash uncovered for 30-35 minutes. Serve your garlic parmesan roasted butternut squash warm and sprinkle with more fresh thyme if desired. Enjoy! ❤️
