How to choose a good butternut squash for roasting
To choose good butternut squash for baking, look for a squash that is plump, unblemished, and that feels heavy in your hand. Store the butternut squash in a dry, cool, dark place (like a pantry or cupboard, avoid the fridge) for two weeks.
How to cut a butternut squash
For this roasted butternut recipe, we only use the top part of the squash – ie. the part that is not hollow. Here are the steps to cut the butternut:
- Grip the butternut firmly with one hand and cut crosswise right above the plump, hollow part. Keep the hollow part for another recipe.
- Peel the butternut squash with a vegetable peeler. The skin of the squash can be tough and might need several passes.
- Then cut the squash in halves, vertically.
- Laying the butternut halves flat, make thin half-moon slices.
How to bake butternut squash

- Arrange the butternut squash slices in a spiral into the baking pan.
- Roast the butternut squash for 30 to 35 minutes, or until cooked through. Easy!
