Quinoa salad is both nutritious and light. Fresh as a Greek salad, this full, healthy, and quick dish is perfect for summer evenings.

Ingredients Quinoa Salad
- 5 oz (150 g) quinoa
- 5 oz (150 g) mixed salad
- 5 oz (150 g) of frozen broccoli
- 5 oz (150 g) smoked salmon
- 3 tablespoons lime juice
- 4 tablespoons olive oil
- 3 oz (100 g) of frozen sliced carrots
- 3 oz (100 g) zucchini, sliced
- 1/2 onion, finely chopped

Directions
- Heat two saucepans of salted water; place the quinoa in one and the broccoli, carrots, and zucchini in the other.
- Remove the vegetables from the heat 7 minutes after cooking, then rinse.
- Cook quinoa for 10 minutes, then rinse under cold water.
- Cut the salmon into strips.
- Cool the vegetables and quinoa.
- Place in a bowl: lettuce, vegetables, quinoa, onion, and salmon.
- Gently mix the salad, then add olive oil and lemon juice.
- Salt and pepper.
