Ingredients list for the Avocado Quinoa Salad
- 1 cup cold cooked quinoa
- 1 avocado, seeded, diced
- 1 cup cherry or grape tomatoes, halved
- A few basil leaves, chopped
- A handful cilantro leaves, chopped
- 3 to 4 tablespoons finely chopped almonds
- 1/4 cup tablespoon olive oil
- 1/4 cup lemon juice (about 1 or 2 lemon)
- 1 tablespoon honey
- Salt, to taste

Directions
1. Toss quinoa, avocado, tomato, basil, cilantro, and chopped almonds in a large salad bowl.
2. Add lemon juice, olive oil, honey, and salt in a small bowl and mix everything well. Pour over the salad and toss to mix well.
3. Adjust seasoning with salt if needed, and serve chilled or at room temperature.
