- 1/2 cup sugar
- 1 cup lemon juice
- 1 ripe pineapple
- 2 tablespoons lime juice
- Sparkling water, to fill up the pitcher

Directions
1. To make the simple syrup, combine sugar and 1 cup water in a medium saucepan over medium heat, stirring until the sugar has dissolved; allow to cool.
2. Peel the pineapple and cut into chunks (keep some for garnish), put in a blender or food processor and pulse until smooth. Pass through a strainer to filter the pulp out.
3. In a large pitcher, whisk together pineapple juice, simple syrup, lemon juice, pineapple juice, and lime juice. Garnish with lime slices and pineapple chunks. Fill to the top with sparkling water and place in the refrigerator until chilled.
4. Serve over ice.
