Ingredients list for the mini strawberry tarts

For the crust:

  • 2 cups crushed graham crackers
  • 1/4 cup sugar
  • A dash of ground cinnamon
  • 1/3 cup melted butter

For the garnish:

  • 1 lb strawberries, hulled
  • 1 1/2 teaspoons lemon zest
  • 1 1/2 teaspoons lemon juice
  • 1/2 teaspoons vanilla extract
  • Crushed pistachio (optional)

Directions:

For the crust:
1. Place the graham crackers in the bowl of your food processor and pulse until finely ground.
2. Transfer the crumbs into a bowl and stir in melted butter, cinnamon and sugar until the mixture is well combined.
3. Press into 3-inch ring molds and put in fridge for 10-15 minutes, then remove the ring molds.

For the filling:
1. Place half the hulled strawberries in a food processor or blender and pulse. Add the lemon juice, lemon zest and vanilla extract and pulse quickly until combined.
2. Spread the filling onto the chilled graham cracker crusts.
3. Slice the other half of strawberries and arrange on top of the crust and sprinkle with crushed pistachio. Refrigerate until serving.
