The key to perfect grilled chicken is in the marinade! Our simple lemon and spice marinade tenderizes the meat, thanks to the lemon or lime juice, and helps it retain its moisture. You shouldn’t have to add more salt after cooking because the meat will be infused with so much flavor! Our second tip is to heat up the skillet and sear the chicken, without disturbing for 6 to 8 minutes per side. You’ll develop nice char marks, and this will prevent chicken from sticking to the grill.

1. In a shallow plate, whisk together the lime juice, oil, cumin, chili powder, garlic powder, salt, and pepper. Rub the mixture all over the chicken breasts and let marinate in the fridge for at least 15–30 minutes.

Tips for the grilled chicken recipe
- Marinate the chicken for longer, like 30mn to one hour. It will make every bite more flavorful. Do not marinate for more than one hour, though. The acidity of lime will alter the texture of the meat.
- We recommend using a cast-iron grill pan. You’ll get these nice char marks, even without an outdoor grill!
- If your chicken breasts are too thick, slice them horizontally to make thinner cutlets before marinating.
